Seeking to bring a broader array of animals to my New York kitchen, I recently signed up for meat shares from two noted Brooklyn butchers: Williamsburg’s The Meat Hook (above) and Park Slope’s Winner Butcher. For $215 per deluxe subscription, each delivers a monthly bounty of meats and assorted fixings, both via the restaurant subscription platform Table22.
The selections are mostly straightforward, with a few surprises to keep things interesting. Last month’s haul from Winner included a sizable pork shoulder (which, after braising, made for great carnitas tacos), ground chicken, beef meatballs in marinara, a container of pork stock, and house-made saucisson au fromage (cured salami with cheese). From The Meat Hook, a whole Green Circle chicken, four bone-in pork chops, fresh duck legs, ground beef, a quart of truly delicious house-made chili and a trio of jalapeno popper sausages (kooky sausage flavors being a house specialty).
Each delivery is scheduled digitally, and they’ve all been smooth, even if the literature included with each is slighter than I’d hoped. My plan was to try both meat shares out and stick with the one I liked best. But three months in, I’ve realized: I love them both, even if I’m still not quite sure what I’m doing with those duck legs. –Lockhart Steele
